How do you serve Welsh Red Dragon cheese?

I want to pair it with Double Dragon Ale, but is there any good way to prepare it or are there snacks that go well with it? I was considering making a Welsh rarebit or fondue, but I don’t know if that would be very tasty. Should I just cube it and serve with toothpicks?

Serve as a table cheese thinly sliced with a water cracker or melted on Melba toasts. Have a jar of a seeded mustard available for spreading on the crackers, toasts or the cheese itself.

Or you could also serve chunks with a lemon olive oil for dipping.

Or make toothpick skewers with a chunk of the cheese sandwiched between a piece of candied lemon peel and a Jalapeno stuffed olive.

Dorothy Lane Market recommends Samuel Smith’s Organic Ale to drink with it, but the Double Dragon Ale is a cute idea too!

P.S. It also pairs well with potatoes like a potato pancake with some Red Dragon shredded in or with eggs as a savory omelet. Zest a little lemon rind on the top of either for a bright note in the food chord.
